BBQ FOOD AND WINE PAIRING
The 'BBQ' word usually refers to a carnivorous imagery: grilled meat is certainly the most traditional, with sausage, chops, skewers, ribs and so on and so forth. In central Italy it is more common to call it 'roasted', but the substance does not change: so much succulence and fatness in the mouth to be cleaned and refreshed with a glass of full-bodied red wine.

The ideal parts of the meat for making a perfect grill are the fattier ones, because the leaner ones risk being dry and vaguely dry. Starting with the pork, loin, chop, ribs, sausage, skewers and bacon certainly cannot be missing, which pair well with bag-in-box red wines of medium structure, with freshness, moderate tannins and persistence on the palate like wines of Abruzzo or Sangiovese di Romagna. Continuing with beef, one of the best in terms of holding up to cooking at high temperatures, the most suitable cuts are fillet and sirloin, rib, rump, loin, walnut and rump. With this type of meat, good drinking reds are preferred, characterized by a soft and at the same time fresh sip, such as the Barbera from Piedmont and Emilia.

A few burgers cannot be missing, to be served strictly with milk buns cut in half to be stuffed with fresh salad, beef heart tomato and your favorite sauces, from mustard to mayonnaise, passing through ketchup and cocktail sauce.
