From conferers to small wine artisans: the winemaking soul of Sannio in a bag in box format.
With Cantina Fosso degli Angeli we finally land in Campania, more precisely in the province of Benevento, in the heart of Sannio. I am Pasquale, together with his wife Dina and his sister-in-law Marenza, who hold the reins of this small artisan cellar of family origin. The three of them, inspired by a common desire, changed the fortunes of the company, choosing to stop giving the grapes to the local cooperative cellar and investing in the processing and marketing of the wine. Today the winery is proudly part of FIVI - the Italian Federation of Independent Winegrowers.
The founding and non-negotiable values of this winery are: autochthonous and organic. In fact, Cantina Fosso degli Angeli in Casalduni cultivates only the typical varieties of the area, Falanghina, Fiano and Greco as white grapes and Aglianico, Sciascinoso and Piedirosso with red berried grapes. The owned vineyards extend over 7 hectares, on calcareous and clayey soils at an altitude of 450 meters; a true paradise, for those who live there and for the plants that grow there. Organic farming is a solid mantra here, as well as the only way to really get in touch with nature. In the cellar, all possible efforts are made to keep the spontaneity of the grapes intact, using only the yeasts present on the berries to activate the fermentation and keeping the level of added sulphites low.
