BBQ FOOD AND WINE PAIRING
The 'BBQ' word usually refers to a carnivorous imagery: grilled meat is certainly the most traditional, with sausage, chops, skewers, ribs and so on and so forth. In central Italy it is more common to call it 'roasted', but the substance does not change: so much succulence and fatness in the mouth to be cleaned and refreshed with a glass of full-bodied red wine.
The ideal parts of the meat for making a perfect grill are the fattier ones, because the leaner ones risk being dry and vaguely dry. Starting with the pork, loin, chop, ribs, sausage, skewers and bacon certainly cannot be missing, which pair well with bag-in-box red wines of medium structure, with freshness, moderate tannins and persistence on the palate like wines of Abruzzo or Sangiovese di Romagna.
