Az. Agr. Torre alle Tolfe
'Less is more' as the only one mantra: Giacomo's vision of Sangiovese in the Colli Senesi.
With Torre alle Tolfe we travel to Tuscany, to be precise to the hills south of Siena, near by Castelnuovo Berardenga. A historic estate that today, in addition to the winery, hosts a finely restored resort and a restaurant, on a total extension of 100 hectares divided between vineyards, olive groves, woods and fields. The name Torre alle Tolfe is linked to a watchtower that stands in the heart of the estate and dates back to the 8th century, when a knight of Charlemagne built it to watch over and protect Siena.
Torre alle Tolfe has been related to the Castelli family since the 1950s and today the fourth generation - represented by Mania and Giotto - runs the business. The principles that have always keep the management solid are the sustainability and the respect for the flora and fauna surrounding the estate. Wine has been made here since 1316, with organic certification on the label since 2004, and since 2010 they have been members VinNatur.
At Torre alle Tolfe, you can breathe peace and slowness, you need only to visit it to realise this. You can fell the love of the nature also in the production of wine, thanks to the support of oenologist Giacomo Mastretta, originally from Piedmont but now a long-time Tuscan adoptee. His way of making wine is totally non-interventionist, professes 'less is more' as its only credo, following the principles of organic farming in the vineyard and adopting only spontaneous fermentation and low use of sulphites in the cellar. Sangiovese is the master here, bringing out wines with character, elegance and vigour, supported by a great acid shoulder, even in bag-in-box!
