Have you ever seen a skin-contact white wine in bag in box? Vinified in red, in contact with the skins, unfiltered. Mealtime, gastronomic, easy-drinking, ready to please everyone's taste. Five-day maceration on the skins in concrete tanks, spontaneous fermentation and cold decanting to clean it. In few words: precise, savoury and fresh, a tannic edge and pleasing to the nose and palate.

We have seen (and experienced) everything about this Macerato and here you will find a summary of its story so far: white wine vinification of grapes from the outer parts of the vineyard in Vezza d'Alba - Piedmont, Roero - harvested on August 20th (to have low alcohol content and lots of acidity) and 5 days maceration on the skins of the finest grapes from the next two harvests. A kind of infusion, as with tea, but in this case the skins are the bag and the must from the first vintage is the boiling water. Do you want a more intense tea? Let the bag steep longer, and that's more or less how we did it, with the Macerato.
HOW, WHEN, WHY?
Here you have a Macerato in bag-in-box! Drink it with fritto misto alla piemontese, with bread and salami in the vineyard, with a tometta di Roccaverano and grissini, with patatas bravas dipped in mayonnaise and poached egg on toast.
